Loser Cook Award: I Can't Even Follow My Own Recipe!

Do you know what's really pathetic?  When you can't even follow your own recipe from the cookbook that you wrote?  Seriously, that's what happened to me on Tuesday night.  I made pumpkin bread mini loaves.  The recipe is printed in my cookbook.  The bread is delicious.  I always receive compliments when I make it and share the bread with friends.  When I make it correctly that is!

My pumpkin bread mini loaves

Well, last night, for whatever reason, I became slightly distracted during the mixing process.  Perhaps it was the fact that I was also making dinner - turkey burgers and sweet potato fries.  Or that I was admiring my new bread slicer and new hand mixer that had just arrived at the doorstep.  Or that my three year old diva of a daughter was whining and complaining.  Excuses, excuses, excuses!  I've got them all.  But basically I forgot an important ingredient: THE SUGAR.  I left out 1 whole cup of sugar in the pumpkin bread!  Did I mention that it's my own recipe? (LOL!)

My husband and I each took a bite of the bread after dinner and both looked at each other while making weird faces.  At the same time we said...."It's bland. What happened?"  Then the realization hit me...."Aww crap, I left out the sugar!!"  My sweet spouse says, "Well, the bread is still good, very moist.  Just add a topping or make a dipping sauce."  I married a smart man, let me tell you (most of the time anyway).

So that's what I did.  I made a cream cheese dipping sauce for the bread.  I saved it from going into the trash.   Things turned out great for the guests who ate it this morning after all.

Here is the recipe I used for the pumpkin bread dipping sauce:

Cream cheese bread dip:

4 oz of cream cheese, softened (I used fat free)
2 and 1/2 cups of powdered sugar
2 tbsp of milk
1 tsp vanilla extract

In a medium size bowl or container, mix all ingredients together until smooth.  Make sure all lumps of sugar are dissolved.  Taste to be sure it is your desired sweetness.  Dip your pumpkin bread in the bowl.  Or use a spatula to spread across your bread.  Enjoy.  (In my case, it really helped cover up the lack of sugar I left out).

However, because I feel like a huge loser for leaving out an ingredient, especially one that I wrote out in my own cookbook, I hereby give myself the following "Loser Cook Award."

That's right Mandy - you were a loser cook!  You failed.   You messed up your own recipe.  That is really sad!

But you'll get over it.  You'll survive.  Take off your apron and tuck away your whisk until tomorrow.  Then try again.  Things will get better.

Nevertheless, I know for certain that this won't be the last time I am a failure in the kitchen.   This is just the beginning.... Stay tuned for more of my kitchen disasters.  They keep coming up and I'm not afraid to admit my mistakes.

And please do try my pumpkin bread recipe from the cookbook.  But don't forget the sugar like I did!
