What's Cookin' This Week (Dec 13-19)?




Here is my meal plan for the upcoming week - what I have lined up for dinner from Dec. 13-19, 2010.  The weekend may change because we are expecting family visitors and typically eat out when we have guests in town:


(Reminder: For my family, breakfast is usually a rotation of oatmeal, muffins, pancakes, banana or other fruit, cereal or toast.  On weekends, I will sometimes cook classic or new twists to french toast, egg casserole, a hash brown dish or more.  When I do, I'll share those here.  Lunch is usually leftovers, soup or sandwich.  Therefore in my weekly meal plans, I usually only concentrate on dinners and 2-3 snacks per week).



Monday, Dec. 13 - "Cheater" Beef Enchiladas from my freezer (recipe is from my cookbook).  Served with side salad and corn.


Tuesday, Dec. 14
- Slow Cooker Chicken Stroganoff


Wednesday, Dec. 15
- Leftovers or Family Dinner Outing


Thursday, Dec. 16
- Ham and Potato Casserole (recipe is from my cookbook).  Served with side salad.
*Note that I didn't make this last week because I had leftovers from my other meals.  I'm looking forward to it this week as this is one of our new favorites!


Friday, Dec. 17
- Sloppy Joe Pizza AND Muffuletta Pizza for our guests in town. 


Saturday, Dec. 11
- Dinner out OR homemade chili from my freezer.

Sunday, Dec. 12
- Sausage and Pumpkin pasta from my freezer, side of green beans.

Here are the snack and desserts I hope to make this week too.  I'm adding MORE than usual since I'm planning to eat several dinners from my freezer this week:

1) Another bread recipe for my new bread maker....  Hoping to have better luck than the first one I made!  I'll share an update later this week on how it turns out!

2) Lemon Cookies


3) Double Chocolate Cranberry Cookies

4) Morning Glory Muffins (recipe is from my cookbook).

  1. LOL! So funny! I need to start making more "sweets" for my family. My husband asks me every night, "do we have anything sweet to eat?" and I reply, "nope, just fruit"... I need to think about it more often I guess :)

  2. PW's Sloppy Joes, Crock Pot Robust Chicken and Slow Cooker Cheesy Potato Soup are on the plan. Lots of sweet stuff in my head: Eggnog Fudge and Eggnog Cookies, Double Chocolate Zucchini Bread (still never got a mini loaf pan :( ) Cinnamon Ornaments and Zimbabwe Cookies among other things...we'll see how the week goes!

  3. I REALLY want to make your chicken stroganoff, but without the mushrooms--we shall see :) I am baking this week, I hope they all turn-out. ALso I entered your cookbook giveaway @anniebakes--thanks for the chance.
